Lemon Chicken


8 Chicken Fillets

1 Egg White

1/2 Teaspoon White Sugar

Salt And Pepper

1Teaspoon Grated Fresh Ginger

30 Grams ( 1 oz) Butter

1  Spring Onion

1 Lemon

2 Tablespoons Vegetable Oil

2 Tablespoons Flour

Lemon Sauce

1/2 Cup Lemon Juice

1Chicken Stock Cube

2 Tablespoons Cornflour

2 Tablespoons Honey

2 Tablespoons Brown Sugar

1 Teaspoon Grated Fresh Ginger

1 3/4 Cups Water


Combine the egg white,white sugar,salt and pepper and ginger in a large bowl,mix well,add the fillets and coat them with the mixture then let stand 10 minutes,coat the fillets with the flour,heat the oil and the butter in a heavy base frypan and cook on all sides till golden brown and tender,remove from heat but keep warm ,spoon the sauce over the fillets and garnish with very finely chopped spring onion.and thinly sliced lemon..

To make the sauce combine the lemon juice with the crumbled stock cube,cornflour,honey,brown sugar,ginger and water in a small saucepan stir over low heat till the sauce boils and thickens .
