Parmesan Crumbed Chicken With Basil Sauce


4 Large Chicken Fillets

1 Cup Fresh Breadcrumbs

1/3 Cup Grated Parmesan Cheese

1 Tablespoon Chopped Parsley

3 Rashers Bacon

90 Grams (3 oz) Butter

2 Cloves Garlic

1 Teaspoon Worcestershire Sauce

1/2 Teaspoon Dry Mustard

Basil Sauce

1/3 Cup Oil

1/4 Cup White Vinegar

1 Clove Garlic

1 Cup Fresh Basil Leaves

1/2 Cup Cream

1 Egg Yolk

Salt And Pepper


Combine breadcrumbs ,cheese and parsley in a bowl,chop the bacon finely and fry till crisp,drain on paper towel then add bacon to crumb mix.

Melt butter in saucepan,add the crushed garlic,worcestershire sauce and dry mustard ,mix well ,dip chicken fillets in butter mixture and place in a shallow ovenproof dish,press the crumb mixture on top of each fillet,.

Bake uncovered in a moderate oven 25 to 30 minutes,serve with the basil sauce.

Basil Sauce

Combine oil,vinegar,crushed garlic,finely chopped basil leaves and cream in a saucepan,heat over gentle heat ,stir till heated through,do not allow to boil,add egg yolk and stir till sauce thickens.

Season with salt and pepper.serve over the chicken..
