Golden Potato Cake

Ingredients

1.5 kg (3lb) Potatoes

30 Grams (1 oz) Butter

3 Eggs ,Separated.

Salt And Pepper

Method

Peel potatoes ,cut into quarters,cook in salted water 15 minutes until tender,drain,mash potatoes and add butter and egg yolks (reserve a little yolk for glazing) and salt and pepper ,beat until well combined ,fold in firmly beaten egg whites.

Spoon mixture into greased 23 cm (9 in) flan tin,smooth top ,brush with reserved egg yolk ,mark decoratively with fork .

Bake in a moderately hot oven for 1 hour or until golden brown,
