Citrusy Creme Caramels

Ingredients

1/2 Cup Caster Sugar

1/2 Cup Water

1/2 Cup Orange Juice

2 Tablespoons Lemon Juice

3 Whole Eggs

3 Egg Yolks Extra

1/3 Cup Caster Sugar Extra

1/4 Cup Cream

Method

Combine the sugar and water in a saucepan,stir over medium heat till sugar dissolves then bring to the boil ,do not stir it again,boil rapidly for 4 minutes or till the syrup turns a light golden brown color,remove from heat immediately that it starts to color then divide the syrup evenly over the base of four lightly oiled heatproof dishes of about 1/2 cup capacity,set aside.

Lightly beat the 3 whole eggs ,the extra egg yolks and the extra sugar,stir in the cream then the orange and lemon juice,strain the mix through a sieve and pour into the dishes,place the dishes in an ovenproof dish and add enough water to come halfway up the sides of the dishes.

Cook in a moderate oven 25 ,minutes or till the mix is set,remove from water and set aside to cool then refrigerate .

To serve dip the base of each dish in hot water then turn out on to serving dishes and serve with extra cream if desired.

      Many thanks for those lovely comments,yes this is one of my favorite recipes and I agree that it is very suitable for farm fresh eggs.

    Greetings…found your blog via Cecilia’s…Your recipes sound great…can you post photos now and then so we can see what the finished dish looks like? I am always more inclined to try a recipe when I can see what it looks like~ 🙂
    PS. What is caster sugar?

      Hello Chris,
      Many thanks for your very kind words,yes I will be adding photographs to most of my recipes including this one in the very near future,
      Caster Sugar is really just a finer grade of sugar and ordinary white sugar would work fine.
