Duck With Honey And Ginger


1 1.25 kg ( 2.5 lb) Duck

2 Teaspoons Soy Sauce

2 Tablespoons Vegetable Oil

2 Cups Chicken Stock (Or 2 chicken stock cubes crumbled into 2 cups water)

1 Teaspoon Honey

2 Extra Teaspoons Soy Sauce

2.5cm (1 in) Piece Ginger

3 Teaspoons Cornflour

1 Tablespoon Water

1 Tablespoon Brandy

60 gm (2 oz) Glace Ginger


Rub the duck all over with the soy sauce,heat oil in a heavy base baking dish or frying pan on the top of the stove and add the duck and cook till the duck is golden brown on all sides.

Place the duck in a baking dish and bake in moderate oven for approx 1+1/4 hour or until tender and juice runs clear.

Remove  from oven and keep warm,pour off the pan juices then return the pan to the stove ,add the stock and deglaze the pan well,add the honey,the extra soy sauce and grated ginger,bring to a boil and add combined cornflour and water,stir till sauce thickens,strain into a separate pan and add brandy,cut the glace ginger into thin strips,add to the sauce.

To serve cut the duck into quarters and serve with the sauce.
