Apple Shortcake


125 gms (4 oz) Butter

1/2 Cup Caster Sugar

1 Egg

3/4 Cup Self Raising Flour

3/4 Cup Plain Flour

1 410 gm (14 oz) can pie apple

1 Passionfruit

1Teaspoon Finely Grated Lemon Rind


Cream the butter and sugar lightly,add the egg and beat well,beat in the sifted flours a little at a time,turn the dough out on a lightly floured surface and knead gently till smooth ,divide mix in half,roll each piece into a round shape between two sheets of greaseproof paper to fit a 20cm (8in) round sandwich cake tin.

Place one round of dough into the bottom of the greased tin which has been lined with greased greaseproof paper,press the dough into the tin to fit tin well.

Break up the pie apple with a spoon ,and the pulp from the passionfruit and the lemon rind,spread over the base leaving a small border around the edge,sprinkle with a little extra sugar ,

Place the second round of pastry over the fruit mixture,press the edges together around the side of the tin.

Brush with water and sprinkle lightly with more sugar ,Bake in a moderate oven 35 to 40 minutes,

Allow to stand 15 minutes before removing from tin.
