Spinach And Brie Flans





For the pastry case

2 Cups Plain Flour

Pinch Salt

155 gms (5oz) Butter

2 Egg Yolks

3 Teaspoons Lemon Juice


500gm Frozen Spinach

30 gms (1oz) Butter

250 gms Brie Cheese

6 Spring Onions

3 Eggs

3/4 Cup Cream

3 Ripe Tomatoes

1/4 Cup Grated Parmesan Cheese

Salt And Pepper


Step 1 Make The Pastry

Sift the dry ingredients into a bowl,rub in the butter till the mix resembles coarse breadcrumbs,add egg yolks and lemon juice,mix till  combined ,turn on to a lightly floured surface,knead lightly and divide into 8 portions,Roll out each portion of pastry between two sheets of greaseproof paper,line 8 10cm(4in)flan tins ,trim the edges with a rolling pin.

Step 2 Make The FIlling

Put the spinach in a large frying pan,stir often while thawing over a moderate heat until any liquid has evaporated,in a separate pan melt the butter,add the chopped spring onion,cook till the onion is tender then add the spinach and stir till combined,season with some salt and pepper,set aside to cool,meanwhile slice the brie thinly,spoon the cooled spinach mixture evenly over the base of the pastry cases then place the sliced brie over the spinach,cut the tomatoes into thin slices and place two slices of tomato on each quiche.

Step 3

Beat the eggs and add the cream ,add salt and pepper and pour carefully into each quiche,sprinkle the parmesan cheese over the top of each quiche,

Bake in moderate oven 30 minutes or until golden brown.
