Leek And Red Lentil Soup


30gm (1oz Butter)

3 Leeks

2 Sticks Celery

2 Rashers Bacon

1 Cup Red Lentils

1 1/4 Litres (5 Cups) Water

2 Chicken Stock Cubes

1/2 Cup Cream

Salt And Pepper

2 Tablespoons Chopped Parsley


Melt the butter in a heavy based large saucepan,add leeks which have been washed and sliced,add the chopped celery and chopped bacon,Cook over a low heat for 10 minutes,covered,Add the washed lentils,water and the crumbled stock cubes,bring to a boil then reduce heat and replace cover and then simmer for another 30 minutes.

Puree the mix in a blender and then return to pan,add the cream and season to taste with the salt and pepper,reheat gently and don’t allow to boil ,stir in parsley and serve hot.
